Yogurt Chicken Rendang

Ingredients
135g Lactel Natural Set Yogurt
2 cubes of chicken stock
200ml water
500g chicken cubes
2 lemongrass, finely chopped
3 cloves of garlic, finely blended
4 cloves of red onion, finely blended
2 string of lemongrass
3 red chilli
4 cloves of garlic
3cm of ginger
3 onion
¼ cup water
¼ cup chilli paste
Steps

Blend the lemongrass, red chilli, garlic, onion, water and chilli paste.

In a pan, mix all the blended ingredients with lemongrass, garlic, red onion, and turmeric leaf and mix evenly.

On medium heat, let it boil for around 10 minutes.

Reduce to low heat and let it simmer for 20 minutes. Stir frequently until ingredients turns dry.

Serve hot with glutinous rice.
Yogurt Lemon Biscuits

Ingredients
120 grams butter, softened
100 grams castor sugar
2 teaspoons lemon skin, grated
1 teaspoons lime juice
1 large egg, beaten
180 grams wheat flour
1 teaspoon baking soda
1 pinch of salt
¼ cup Lactel Natural Set Yogurt, whisked
40 grams oats
Glaze
50 grams icing sugar
2 teaspoons lime juice
1 tablespoon teaspoons lime skin, finely grated

Beat castor sugar and butter till light and fluffy. Add in grated lemon skin, lime juice and egg, and beat till even.

Sift together flour, baking soda and salt evenly. Add flour mixture to the mixture of butter-sugar alternately with yogurt. Mix evenly after every addition.

Add 1 spoon of biscuit mixture to baking tray placed with baking paper. Leave some room for the biscuit to expand.

Bake in oven at 180ºC for 15 – 20 minutes or until biscuits turn brownish. Leave to cool on wire rack.

In a small bowl, mix icing sugar, lemon juice and granulated lime skin with a small beater.

Spread lemon icing on top of biscuits, and allow it to harden.
Lemon Lime Muffins

Ingredients
1 cup Butter, softened or melted
1⁄2 cups Granulated sugar
1 1⁄2 teaspoons Baking powder
4 Eggs
2 teaspoons Lemon extract
1 cup Lactel Natural Set Yogurt
2 1⁄2 cups Flour
1 teaspoon Salt
1⁄2 cup Lime juice
2 teaspoons Lemon or lime peel, grated
Additional sugar and ¼ cup lime juice

Cream butter and sugar together until smooth.

Add eggs and beat well.

Add lemon extract and mix well.

Sift together flour, baking powder and salt.

Add this alternately with the lime juice, mixing thoroughly after each addition.

Mix in grated peel.

Fold in the Lactel Natural Set Yogurt.

Fill muffin cups about 3⁄4 full and bake at 180ºC for about 15 minutes or until a wooden pick comes out clean.

Cool for about 15 minutes, then dip in lime juice and then in granulated sugar.
